How did you originally install the nVidia driver in the first place? If
you used the shell archive files (pkg.run) downloaded from nvidia.com,
this also modifies some of your library files that will make it pretty
much impossible to ever go back to nouveau after that. If you installed
it this way, then you need to re-run the pkg.run file every time there
is a kernel update. You do have to ensure that nouveau is not loaded
when you do this.
I know about this problem and have used the rpmfusion rpms which
deals with the lib files issue - the akmod package from rpmfusion
automatically builds a new module whenever a newer kernel is
detected - this has all worked fine for me for a long time
I can't say what happens if instead you installed the nVidia driver from
rpmfusion packages.
The rpmfusion install/uninstall leaves the original libs intact - it
doesn't, however, delete the blacklist arg in grub.conf, which I had
to do manually - I also made sure that the
/etc/modprobe.d/blacklist-nouveau.conf file was deleted
As for why X won't start: have you looked in the logs?

Here's the last section of my Xorg.0.log file: the
error message regarding AIGLX is benign according to several
posts that google found - it's an as yet unsupported feature,
but shouldn't have any effect on the driver working;
