I've found scripts in /etc/NetworkManager/dispatcher.d/ very useful for counteracting this "feature", eg starting NFS mounts over WiFi. Incidentally, is there such a thing as NetworkManagerDispatcher now? It is mentioned in the ridiculously short NM man page.
