The first requires modifying the configuration of your local SMPT server (Sendmail, Postfix, etc) and the second requires setting up the account in your mail client. (Thunderbird, Pine, Elm, Evolution, etc.) Changing the name the SMPT server says mail is from is common because the mail server host name may not match the domain name.
