This sounds like a problem with the GTK2 print dialog. My recommendation is to file a bug report against the gtk2 component in Bugzilla. You might be able to get some diagnostic information by running evolution (or OpenOffice.org without that checkbox checked) from a terminal window and watching for messages there while you attempt to print.
