AFAIK (at least with FC6), you cannot get the vesa driver to support any modes not in the BIOS mode table, and 1680x1050 isn't in there. The only solution I found was to install the proprietary ATI drivers instead, which not only have 1680x1050, but are significantly faster and support multi-head. Note, do NOT use the vga= kernel parameter if you use the ATI driver; it cannot initialize the display if it's not in its default text mode.
