If you use NFS, you don't even have to do the loopback mount. The installer will handle that for you. I'm not sure anymore, but I believe the last time I read up on the installer, the NFS method would allow you to use the graphical installer whereas the FTP and HTTP methods would not. I could be wrong on that though, so corrections are welcome. And if you prefer the text mode install it's a moot point.
