There are several ways.

I don't understand the speech part. Do you have a screen-reading
program on the laptop?  Also, I'm not sure there would be any
advantage in playing music with an X program and forwarding the
sound compared to sharing out the files and playing them with
itunes or media player on the laptop.

You can use vnc, install X on the laptop, or run freenx on
the server and the free client from www.nomachine.com.  The
latter is probably the easiest overall although there are
some quirky steps to get the ssh key to work.  I'm not sure
if the freenx server supports remote sound or if you need the
commercial version for that.
