For ease of use load everything... except since you asked what to load
you already know that is not the way to go.

Only run what you need and only load what you need, and lock everything down.

As an example a proxy server should run the base OS with no GUI, squid
and ssh (on a non-standard port.

As an example a web server should run the base OS with no GUI, Apache
and ssh (on a non-standard port.  If the web site(s) require it add as
necessary PHP, Perl, MySQL, etc.

The less you run the less likely you will be cracked.

NFS.Samba, telnet and r services (rcp,rlogin,rsh) are an open
invitation to potential crackers and script kiddies.
