Seriously, I had dovecot running in 5 minutes flat. I don't think it's configuration is as nice or easy as imapd, but it really is not hard to set up. Even the config file is commented.
My suggestion is to learn the new Fedora 3 way of doing things, because I doubt we're ever going to go back to imapd, and do your really want to go through this each time we upgrade to FC4, 5, 6 etc?
