No. fedora.us uses "stable" in fc2 as does livna.org.

You can set more or less any update behaviour through
/etc/apt/preferences. Read the man-pages for apt and apt-preferences
(just forgot how they are called), they are very good. Confusing at
first, but when you get the idea what you can do with setting
preferences for apt, it's a supercow - as it is promoted ;-)
