You seem to be the only one that believes the security issues are removed.

Security isn't doing what is easiest because you believe your network is secure.  Security is doing what is best just in case.  Sending your root password over the network in plain text isn't good, even if you believe your network is secure.  Sure, you can get around it by encrypting the connection, configuring different authentication, etc., but why not just use a different account that doesn't have root's baggage?

You seem to like using this as a "religious" reason to not like dovecot, which is your personal preference.
