I've never used it before, but try opening a terminal and typing gnucash (if you haven't already :) Alternatively, type 'gnu<tab><tab><tab>' to see all commands starting with gnu.

Thank you :) once I removed and reinstalled it the icon popped up and all is well.
Is there a bug reported for the Add/Remove Package Manager??? Because I could not get it to work which is what caused all these problems.
