Not that I have installed gnucash but thought I will point this out
rpm -ev "RPM PACKAGE NAME" that means only gnucash and not the other
extra stuff.

But since it is already installed try running this

[root@HellInc root]# rpm -qa | grep gnucash
gnucash-1.8.7-1
gnucash-backend-postgres-1.8.7-1

The above is the from the default installation of Fedora Core 1 and
mostly no updates applied don't remember it too clearly.

The binary file is called gnucash so do an Alt-F2 and type in gnucash or
just type it in a terminal window. And lo and behold you should have
gnucash fired up.

In my system gnucash pops up here

Main Menu -> Office -> More Office Applications -> Gnu Cash

Look thoroughly through all the listed menus it is bound to be there
somewhere.
