You can use system-config-lvm for as long as it's available. It seems theres a general trend for getting rid of some of the system-config-... tools. It will default to creating a whole disk LVM if you don't use fdisk/parted/gparted to create a partition first as I found out the hard way. It's not really a problem but if you dual boot windows it will assume that the disk is not partitioned at all.
