I do it by using xterm instead of gnome-terminal, which takes a "-bg" argument to specify the background color. I have a Connect folder on my desktop, and it contains a bunch of launchers that launch xterm with a -bg argument and a "-e ssh server" argument, so that I can have a different background color for each system I log in to.
