The simplest way is to regularly backup your machine definitions via "virsh dumpxml name > name.xml", then you can recover the machine definition via "virsh define name.xml". If you can still boot f11, that would be the way to go. The error-prone, will probably force you to re-activate windows, way is to define a new virtual machine with virt-manager, and when it gets to the disk image part, say "use existing", then "browse local", then point it at your existing image file.
