Few additional tricks:
 * kiosk mode ( check
http://www.enigmacurry.com/2007/02/17/gnome-kiosk-mode-make-any-app-fullscreen/ and comments there, too ), but it doesn't work with every window
 * get all elements into the top bar - replace main menu with the
smaller version, remove the user switcher and add window list there
