Perhaps some screen during firstboot that lists all the
paranoia-related security questions, with defaults checked?  Me, I'd
like the X server to default to listening on TCP connections, for
example.

Then, there can be some text that says "for security reasons, we
recommend you not change any of these choices, but if you have
specific reasons to do so, please do now."
