This should do it:
[root@localhost]# chkconfig setroubleshoot off
[root@localhost]# service setroubleshoot stop
SElinux will keep running, and the alerts will be logged, but they won't
be flashing on your screen.

You won't get any alerts this way. Just be sure and remember to check
those logs on a regular basis.
