The RHEL 5 documentation is mostly correct, and will guide you through the 
disk druid partitioner.  See 
https://www.redhat.com/docs/manuals/enterprise/RHEL-5-manual/en-US/RHEL510/Installation_Guide/s1-diskpartitioning-x86.html 
for the beginning of this section.

If you remember that RHEL5 is almost a Fedora Core 6, you'll quickly find the 
RHEL manuals very useful.
