Basically, I think you will find you have to LABEL your partitions,
using e2label, and then change the entries in /etc/fstab
and /etc/grub.conf to use labels, eg I have

LABEL=/                 /                       ext3    defaults        1 1
LABEL=/boot             /boot                   ext3    defaults        1 2

in fstab, and

and

title Fedora (2.6.22.1-33.fc7)
        root (hd0,1)
        kernel /vmlinuz-2.6.22.1-33.fc7 ro root=LABEL=/ rhgb quiet
        initrd /initrd-2.6.22.1-33.fc7.img

in /etc/grub.conf .
