I had / as the root label - after install it was changed to /1 so it does change the labels some of the time. I suspect you have to label it something other than /. You can label it by switching to a different VC (ALt F2 for example) and juts elable /dev/foo before you hit the custom partition section. Be nicer to have it in the GUI tho I agree.
