From/Reply-To/Signature/Headers are per account settings so you can do
that.

Not exactly but close: You can do complex filter matches and use those to
do global filtering and apply actions or to do per folder filtering and
apply actions. AFAIK right now you can't do per account filtering rules
neatly. There is also a "throw this through a script" filter command so
you can handle pretty much decision.

The IMAP support in claws is pretty good.
