Each gnome program "registers" itself in a *.desktop file in /usr/share/applications. There is a "MimeType" line in these files indicating what types of files it can handle. (The mimetype definitions are in /usr/share/mime*).

You may have *.desktop files under your home directory too.

If you change these files, you need to run update-desktop-database.
