Thank you to all who replied to this.  For some reason, gmail seems to
have misplaced some of the replies (which I read, but can no longer
find).

Anyway, setting the SMART_HOST, and installing sendmail-cf, solved my problem.

I should have thought about using SMART_HOST to configure my box to
just forward through the company's SMTP server, but I had monkey-mind
and was fixated on just trying to figure out how to convince sendmail
to use a specific IP address for mycompany.com instead of looking up
the MX record for it.
