I am not sure how to do this without losing the security of getting the
very latest updates? Maybe a right or centre mouse click or a special
accelerator key?

You can set in preferences for it not to refresh on startup. This
probably isn't what you're looking for though, as you still would need
to go to the Repos tab and hit Refresh before you'll have anything to
browse.
