Ok, as usual, I found the solution 5 minutes after posting the message.
The problem was the .recently-used file that contains something that
gnome doesn't like. I have yet to figure out what was causing the
problem (I reopened all the files used today and nothing happened) but
deleting the file has fixed the crash.
