There I can click on Plug-Ins... which opens the Plug-Ins dialog.
But there is only a cancel and OK button. I can't insert anything in

When you try to open a file that has no associated program, you should get a requester asking what you want Firebird to do. There is a "suggested" box (often gedit or such) pre-highlighted and a place for you to pick the application, via standard file-chooser. Also a checkbox to make the action you choose, default for all files of the same mimetype. Once selected as the program you want to use, it will show up in the Plug-ins area you described.
