boot console to CLI and VNC to GUI? == HELP

Slight emergency here

Several of my FC2 / FC 3 boxes have started a lil thing where they wont
let me get a terminal from either the console or over vnc

A reboot seems to cure the problem, but that's not a good solution, so I
want to disable the GUI on my consoles so if worse comes to worse, I can
get them to respond to me from there, but I still want the GUI on vnc
which is my normal way into the systems

Can someone point me in the right direction of a procedure to set that
up?

I know that I have to change the startup run level to 3 but not sure how
to do that or of other interactions.  

I am not opposed to looking it up myself, but I don't know what to
search under, as I don't know all the lingo yet -- SORRY :(
