I recall reading about a config file that tells vi what colors to use etc... maybe you get a different one of those when you use sudo.
Unfortunately I don't recall the name of that file :-(
It's ~/.vimrc most likely.
Copy that file from your user home directory to /root/ and see if that fixes it.
