I use primarily totem.
Fedora does not come with the needed plugins for a lot of media types - but I have packaged them (32 bit) for x86 at http://mpeters.us/linux/fc3_gstreamer.php


I also run a newer totem than fedora comes with - biggest benefit is that DVD playback works (visualizer also works as a bonus)

I do occasionally come across something that doesn't play in totem with all my plugins - for that, I do use mplayer.
