If I upgrade Postfix or MySQL and the new version does not work, my operating system should continue to function, and I can fix the problem. ~ However, if my kernel breaks, then I can not boot, and therefore will have a much more difficult time fixing the problem.
Nothing is quite so perilous as upgrading a kernel. Therefore, you do not ever want your old kernel removed until you are reasonably sure the new one will boot correctly on your equipment.
As others have told you, yum will not remove the old kernel, but instead simply install a newer one. Once you are sure everything is OK, then and only then should you remove the old one.
