Look at the files in your /etc/yum.repos.d directory and you can see differences in whether or not they use baseurl or mirrorlist. If it's set to mirrorlist, then it acts just like up2date. It goes to that site, picks a mirror and connects to the mirror. This is the reason why, if you try to do an update as soon as you hear about it's release. You may have to run "yum update" several times. Either because the mirror you connected to doesn't have the update yet, or because you connect to different mirrors each time.
