When in Windows, for example, are you really going to need your .gnome folder? Nope. Also, as James pointed out, some programs just won't work if you move your /home directory, via symlink or fstab, to a vfat partition. Since I do a lot of writing and some graphics work (some of which I do need Photoshop for), I created a vfat partition on my dual-booted laptop where I store all of my working documents. It's a vfat partition, of course, called /dev/hda4 in Linux, and D: in Windows. In Linux, I mount /dev/hda4 to /home/richard/documents, and work there.
