Using su - is clearly much simpler. Another option is to use sudo. Around here, we compile it using --with-secure-path=/usr/local/sbin:/usr/sbin:/sbin:/usr/local/bin:/usr/bin:/bin:/usr/X11R6/bin which is usually exactly the right thing with no surprises.
