I am new to the list so I apologize if this has been asked before. I was wondering if anyone here has been using fedora in a production server environment, specifically web and mail services. I know it is bleeding edge but it seems really stable in my experience.

Yes, absolutely. The only problem is that you only have about 12-18 months of "officially" generated updates. But if you build a pretty stripped down machine (which is typical for a server) it's not hard keeping your software up to date after that.
