If you take the default DHCP option, you'll get the behavior you saw. I believe that if you had assigned a static IP at install time, you would have seen the behavior you expected.
Nope, he wouldn't. Anaconda generates /etc/hosts file with only one line: 127.0.0.1 localhost localhost.localdomain hostname hostname.domain. I'm correcting this in kickstart postinstall script since days of 7.3 (or maybe even before?)
