Add the following line to /etc/udev/rules.d/10-local.rules:

BUS="scsi", SYSFS{model}="iPod            ", KERNEL="sd?2", NAME="%k",
SYMLINK="ipod"

(mind the spaces after "iPod", they're important).  That will create a
symlink device called /dev/ipod whenever you plug in the iPod.  How to
get the mount point under /media changed is still a mystery to me,
though.
