It's called "Browser" mode. Right-click on the thing you want to "browse" and choose "Browse Folder". If you prefer the browser mode to the spatial mode, there's a gconf setting you can change: /apps/nautilus/preferences/always_use_browser
You can also just Ctrl-L and a window pops up to enter any location you want.
