Since I read about stability problems with 64bit Fedora Core 2 & 3 regarding kernel memory leaks when running 32 bit applications I am wondering whether Fedora is my distribution of choice for this job.

Since you will presumably compile your mail server code yourself, you'll end up with 64 bit applications, so this is a no-op.

Has anybody high and constant load experiences with Fedora's 64bit distribution?

Early FC 2 amd64 kernels were no good. The updated 2.6.8-base kernel appears to be quite solid.
