You're right, the unstuff executable extracts that sample file just fine. It does not however open the file I received from a customer. I can't post that file on-line as it contains personal information.
I ended up having to download the demo of Stuffit for Windows to get the files extracted.
Thanks for all your help but I'm giving up on this. I hopefully won't have to deal with Stuffit files much in the future.

It works fine for me on FC2, try the following: (If you don't have lftpget, use wget)
lftpget ftp://ftp.pbone.net/mirror/ftp.redhat.com/pub/contrib/libc5/SRPMS/stuffit-5.2.0.611-5.src.rpm
rpmbuild --rebuild stuffit-5.2.0.611-5.src.rpm
cd /usr/src/redhat/RPMS/i386/
rpm -ivh stuffit-5.2.0.611-5.i386.rpm
lftpget http://www.firewalldesign.com/sderman/ClipCommControl/ClipCommControl1.10.dmg.sit
unstuff ClipCommControl1.10.dmg.sit
ls -al ClipCommControl1.10.dmg
