If your're leaving, and the job is _really_ a part-time effort, why don't you setup a consultant agreement with them and continue handling it? Well. I am leaving my company and I need to find somebody to freelance (since IT was just a small part of my job). So I was thinking about moving everything into one server and doing RAID1 on it. In case something crashes, I can just have Dell (or whoever I find) get here and restore the thing back to normal. Also running one server might be cheaper. I don't know, I am leavin, but I do care about the company, so I don't want to leave them in the dark ages, just cause they can't afford to get a part timer to do it.
