Run a dhcp server on a system that has 2 interfaces. I want dhcp to
respond to only one interface. Is there anyway of defining that no
communication should take place across, say eth0?

Edit /etc/sysconfig/dhcpd to set the following line:
DHCPDARGS="eth0"
That will be applied when you next start dhcpd: 'service dhcpd restart'
