Evolution shipped with Fedora 1 has indeed a nasty bug, if you haven't
set any encoding, it sends out empty content-type: headers.

Set Tool->Settings->Email prefs.->Default character encoding to some
value.
ISO-8859-1, ISO-8859-15 or UTF-8 are fine.
