Removing sendmail is really not necessary, but shouldn't hurt anything

Did you also run "redhat-switch-mail" to update the links in
/etc/alternatives ??

I have always rolled my own version of postfix using rpmbuild, so I
don't exactly know why your version of postfix is referencing
/usr/lib/postfix. All postfix daemons that are started (from master.cf)
should be located in /usr/libexec/postfix. At least that's the directory
structure I see at this end.
