I want to do the Minimal Install but I was wondering if it will install enough packages for me to "easily" set up dial-up and install mozilla, gimp, and grip?

Yes, the point of the minimal install we are working on is to save some space but to allow you a working, usable system where you can "easily" add just about anything.
