There is a spot on the boot screen where you can click and get the good ol' text startup screen displayed. It's up to you which you prefer.
No, you're missing the point.
IIRC, that graphical boot won't display *anything* until you've hit runlevel 5. fsck'ing discs happens before the runlevel switch.
So, if you're fsck'ing, the graphical boot will just sit there and do nothing, no status output whatsoever, not even if you click "show output". THen, when the fsck'ing is done, it will display the bootup procedure, as per usual.
