Appropiate AddDefaultCharset is ISO-8859-15, but....did you try to save
index.html in UTF-8, and define that as page code? If you set the HTML
editor to do so (OpenOffice I think could do, by example).....

Previous releases from Red Hat had minor problems with UTF-8 and
Spanish, in Xterm, man pages, console (runlevel 3), but now Fedora runs
quite fine.
