Have no idea how to do it with Network Manager. When configuring things by hand, you would do something like this. In /etc/sysconfig/network-scripts/ifcfg-ethN (replace ethN with name of your wireless interface), simply list all keys (as hex strings, see man page for iwconfig for supported formats), and specify which one is default key (1, 2, 3 or 4). If some of the keys are unknown to you, you can simply skip it.
