I haven't used others - but rdesktop to Win2K-Server/WinXP can be
tunneled through ssh. The port to forward is 389.

ssh -L10000:win2k-ts:389 gateway
rdesktop localhost:10000

As long the client can take a 'port' option - most things can be
tunneled. I've also tunneld lpr (requires LPRng-lpr), SMB (smbmount..)
etc..
